摘要
为了研究软枣猕猴桃果实成熟软化中果胶分解酶活性的变化,以软枣猕猴桃为试材,测定了软枣猕猴桃在采后多聚半乳糖醛酸酶(Polygalacturonase,简称PG酶)和b-半乳糖苷酶(β-galactosidase,简称β-Gal酶)活性变化。结果表明,软枣猕猴桃果实在生长发育初期PG酶活性较高,在成熟前活性最低,但成熟期又急剧增加;软枣猕猴桃果实采后1d,PG酶活性达峰值,说明PG酶在软枣猕猴桃采后前期起主要作用。软枣猕猴桃果实在生长发育过程中b-Gal酶活性除幼果期外持续增加;软枣猕猴桃果实采后b-Gal酶活性继续增加,在采后4d达峰值,说明b-Gal酶在软枣猕猴桃采后后期起主要作用。软枣猕猴桃果实成熟软化中果胶分解酶活性的变化,为软枣猕猴桃果实软化机理研究提供重要的基础数据,对软枣猕猴桃资源的开发利用具有非常重要的意义。

Abstract
In order to study the changes of pectin position enzyme activity in Actinidia arguta fruit during mature and softening, we used Actinidia arguta fruit as materials,determined the changes of Polygalacturonase enzyme (Polygalacturonase, was called the PG enzyme) and β-galactosidase (β-galactosidase, abbreviation β-Gal enzyme) activity. The results indicated that PG enzyme activity was high in the initial period of growth and lowest before maturity period,but increased largely during maturity period; PG enzyme activity reached a peak in the 1d after picking ,showing that PG enzyme play a leading role in the earlier period after picking. β-Gal enzyme activity increased sostenuto during growth except young fruit stage; β-Gal enzyme activity continue increased after picking,reached the peak in the 4d after picking,showing that β-Gal enzyme play a leading role in the later period after changes of pectin position enzyme activity in Actinidia arguta fruit during mature and softening providing important basic status for softening mechanism research. It has the very vital significance to the development and use of Actinidia arguta resources.
